Felicia Mcclinton says that when your goal is to cook healthy, it’s easy to succeed with Mediterranean recipes, and proves it with her recipe for Sicilian Swordfish.
Sicilian Swordfish
This is a unique southern Italian recipe that can be prepared in 25 minutes and serves four. It is also low in fat and calories.
Ingredients:
600 grams swordfish, sliced 1 cm. thick
200 grams tomatoes
Olive oil for cooking
1 onion, finely chopped
1 clove garlic, crushed
50 grams black olives
Parsley, chopped, for garnish
Directions:
Briefly boil the tomatoes so you can easily peel them. Preheat the olive oil in a frying pan and then fry the onion and garlic until golden brown. Add the sliced Swordfish. Cover the frying pan and allow the Swordfish to cook. Add the tomatoes after a few minutes. Before removing the Swordfish from the pan, sprinkle the black olives and chopped parsley on top. Serve hot.
Nutritional Value per serving: 231 cal, 8 gm fat, 6 carbs, 32 gm protein, 1 gm fiber
