Just over a year ago Erika Clark made a cheesecake for her boss at Two Stick; soon after, it was suggested that the item be added to the menu as a weekend special. When customers realized that their server was also the baker, they began placing orders of their own for cheesecakes, cookies and cupcakes.
“I’ve always loved to cook, bake and eat,” says Clark. “My family was a big influence on my love of cooking and my friends are a constant influence on the variety of items that I learn to cook.” According to Clark, her most popular cheesecake so far has been her mango cheesecake with mixed berry sauce.
